Yummy Oatmeal Chocolate Chip Cookies

Yummy Oatmeal Chocolate Chip Cookie's


No Sugar and no Flour!  Full of yumminess!  My kids loved these, and so do I.  Just make sure not to eat the whole batch by yourself!

3 mashed ripe bananas
1/3 cup unsweetened apple sauce
2 cups oats
1/4 cup almond milk
1/2 cup raisins or dark chocolate chips
1 tsp vanilla
1 tsp cinnamon

preheat oven to 350 degrees. bake for 15-20 minutes

We made our first batch with chocolate chips, and I think that was the kids faborite part.  I am thinking the next batch I make I will do some with raisins instead of chocolate chips.  I think they would be fabulous!

3 Week Core Challenge

How do you handle the holiday's?

Do you eat way more than you should?

Is it hard to find time to take care of yourself?

Do you get to busy to workout?

YES, YES and YES, for me!

Seriously!  Life never slows down!  So this year I decided to make a change.  After losing 20 lbs. in the last 6 months.  And finally getting to my goal weight.  I didn't want to undo any of that hard work over the holidays.

So I founds some great friends to join in with me, and we put together a great team!  It was amazing, we had some great support, to keep going.  I didn't gain one pound over the holidays, and that is not normal for me!

I put together a group on facebook.  Everyone in the group was required to check in daily.  Everyone did the daily exercises.  With Sunday being the rest day.  So we did the first workout on Monday, Tuesday, and Wednesday.  The second workout on Thursday, Friday, and Saturday.  And so on.







Everyone did amazing!  We talked about some great tips to stay on track for the holidays.  Shared some fun recipes.  And had am amazing camaraderie!!

I am so thankful for all the ladies for keeping me on track this year!  I wanted to share with my followers what our plan was.

3 weeks
5 minutes a day
Sundays off
Sounds easy, huh!  Some of these exercises were tough, but we stuck through them.  The last challenge, I challanged every one to hold plank for at least 1 minute, but to go as long as they could.  It was awesome!  Some of the ladies held plank for 3 minutes!!!  WOW!  AMAZING!

Clean Eating Leek and Carrot Soup

Last year I found a really yummy recipe for Leek soup through Pinterest.  I thought I had pinned it on my board.  So when I went to find it this last weekend, it was no where to be found.  So I thought I could find it again.  But every recipe I looked at had potatoes in it, and I knew it was not the one I was looking for.

So I went off my memory and made it the way I wanted it.  I was pleasantly surprised how yummy it was.  So I wanted to share the recipe with you.  It was a simple soup to put together.  It took more time to cook than it did to prepare, which I always love.  I am no chef, and never will claim to be.  When I was growing up, my brothers would actually tease me about my cooking.  But I am slowly learning, and I am thrilled when something turns out so fabulously!



Clean Eating Leak and Carrot Soup

3 leeks
Bunch of Carrots
1 bunch of broccoli
4 garlic cloves
salt and pepper to taste
Coconut oil or Olive oil
1 container Organic Chicken stock

Instructions:

Chop veggies up in chunks.  Place on pan with garlic cloves and sprinkle with coconut oil or olive oil.  I used Extra Virgin Coconut Oil, and place chunks of it over the top of the veggies to melt.  Then sprinkle over the veggies with salt and pepper.


Place in oven.  Roast at 350 degrees for 30-45 minutes depending on how large your veggies are.  The roasting will give the best flavor to the soup!  Love it!!  Make sure the veggies looks soft when taking out of the oven.

Put all the veggies in a blender with Chicken stock.  The less chicken stock the thicker the soup will be.  The more chicken stock the thinner the soup will be.  This is up to you.
Heat soup back up in a pot on the stove until warm.
Eat and Enjoy!!  Perfect soup for cold days!!


Did you know that leeks are one of the most healthy foods we can eat?  They can help rid our bodies or bad toxins too!  Sounds like a great food to add into our diets.
